WHAT: Tapas & Wine Night

WHEN: Wednesday 23rd June

- I will be cooking six different tapas dishes and I am inviting you to cook along with me, each dish is relatively simple and easy to prepare but will be sure to get your taste buds shouting for more. The session will be broken into two halves, in half each we will cook and taste 3 dishes with a wine pairing chosen by my good friend and wine guru Tom!

 

I will guide you through each of the steps for preparing the food and Tom will speak a little about the wines he has chosen and why he thinks they are a good match for the dishes they are paired with, he will also speak about the grape varieties and give you some tips on pairing wines with food. 

The session will start at 7.30pm and last roughly 90 minutes but maybe a little longer depending on how well organised we are after a few glasses of wine! The dishes and wine pairings are: 

Starters

Pan con tomate – Lightly grilled sourdough bread topped with crushed tomatoes, garlic, salt and olive oil

Cured ham, peach and basil – Ripened peaches wrapped in cured ham and fresh basil

Grilled asparagus with romesco sauce, manchego and fried egg – Grilled asparagus served on a bed of romesco sauceand topped with a free-range fried egg and manchego cheese

Mains

Chorizo in red wine – Spicy chorizo cooked slowly in red wine served with caramelised red onions

Patatas Bravas – Classic Spanish tapas dish of fried potatoes topped, smoky tomato sauce and garlic aioli  

Chilli and garlic prawns – Flash fried prawns with chilli, garlic, paprika, chopped parsley and lemon

Ingredients Required :

Pan con tomate

2 x very ripe tomatoes

4 x slice sourdough

Extra virgin olive oil

Sea salt

1 x garlic clove

 

Cured ham, peach and basil

6 x slices serrano ham or parma ham

2 x ripe peaches

10 x basil leaves

 

Grilled asparagus

1 x bunch green English asparagus

1 x jar roasted red peppers (200g)

100g blanched almonds

Splash of sherry vinegar

Extra virgin olive oil (50 -60 ml)

1 x garlic clove grated 

2 x eggs for frying

1 x small piece of manchego (or parmesan if you can’t get manchego)

 

Patats Bravas

500g Maris Piper potatoes

1 x small onion, peeled and finely chopped

2 x garlic cloves finely chopped or grated

2 x tsp sweet smoked paprika

1 x tsp caster sugar

1 x tbsp tomato puree

Splash of sherry vinegar

1 x tin chopped tomatoes

Pinch of chopped flat parsley

3 X tbsp mayonnaise such as hellmans

1 x garlic clove grated

Few ndrops of lemon juice

Sea salt and black pepper

 

 

Garlic and chilli prawns

8 x large shell on raw king prawns

2 x garlic clove

1 x red chilli

50ml extra virgin olive oil

½ tsp smoked paprika

 

Chorizo in red wine

4 x large cooking chorizo

250ml red wine

1 x garlic clove

1 x bay leaf

1 x red onion finely sliced

Splash of sherry vinegar

1 x tbsp soft brown sugar (or demerara)

If you are unable to get any of the wines mentioned above then any Spanish Albarino  and Rioja Reserva will do just fine.
